Courgette Rosti Triumph

The courgette rosti I made for lunch was a thing of beauty. Gorgeously delicately green, succulent and crispy, deliciously satisfying.

Today I ate: -
  • Sausage, half a tomato, mushrooms
  • Courgette rosti, salad leaves, mayo
  • Tuna mayo, 1 slice char-grilled aubergine, half an avocado, salad leaves
  • Stilton
  • Double cream with Splenda
  • 2 squares Thornton's Cuba dark chocolate
